Washed vs. natural process, explained

Processing happens right after the coffee cherry is picked, before the beans are ever roasted, and it shapes flavor as much as origin does. Washed coffees have their fruit removed before drying, giving a cleaner, brighter cup. Natural coffees dry inside the whole cherry, picking up fruitier, heavier sweetness along the way. Neither is better — they are just different tools for different flavors.
